Pumpkin Soup

Recipe c/o of Lola Poleng...I had dinner at their house a couple of weeks ago and simply love the soup she served. So here I am and tried to make one...not bad at all! My first recipe entry and hopefully I can post more later on.

Ingredients:
  • 4 cups chopped squash
  • 6 cups of water
  • 1 beef cube
  • 1 medium size chopped onion
  • 1 clove chopped garlic
  • 1/2 cup milk (fat free for those on a diet)--I prefer putting milk than cream for nutritional value
  • 2 tablespoon fat free/ lite butter
  • salt and pepper to season
Process:
  • Sautee garlic and onions with butter for a minute
  • Add chopped squash/ pumpkin and sautee for 2 minutes
  • Add water, beef cube and bring to boil until the squash/ pumpkin soft
  • Mashed the squash until smooth then add milk.
  • Simmer until soup is creamy, add salt and pepper to taste
  • You can add crunchy bacon bits before serving (optional)
