Ingredients:
- 4 cups chopped squash
- 6 cups of water
- 1 beef cube
- 1 medium size chopped onion
- 1 clove chopped garlic
- 1/2 cup milk (fat free for those on a diet)--I prefer putting milk than cream for nutritional value
- 2 tablespoon fat free/ lite butter
- salt and pepper to season
- Sautee garlic and onions with butter for a minute
- Add chopped squash/ pumpkin and sautee for 2 minutes
- Add water, beef cube and bring to boil until the squash/ pumpkin soft
- Mashed the squash until smooth then add milk.
- Simmer until soup is creamy, add salt and pepper to taste
- You can add crunchy bacon bits before serving (optional)
