Ingredients:
Pasta Sauce:
- 1 large can of tomato chunks (hunts or del monte is a good brand...you can use fresh tomatoes and tomato sauce)
- 20 leaves of fresh basil (chopped)
- 2 tables spoon lite butter
- 1 pc large onion (minced)
- 5 cloves of garlic (minced)
- salt and pepper to taste
- 500 grams of cooked penne pasta or spagetti (San Remo or Ideal is al dente when cooked)
- chili flakes to taste
- parmesan cheese
- 1/2 cup fresh parsley
- baguette (slice to 1/2 thick)
- 3 cloves garlic (chopped)
- 1/4 slab butter
- 1/4 kilo fillet dory sliced thinly
- salt and pepper to taste
- 2 table spoon olive oil or canola oil
Pasta
- heat pan and put butter, sautee garlic and onion for 1 minute
- add tomato chunks and simmer
- add salt, pepper and chili flakes
- simmer for another 5 minutes remove from heat and add basil leaves
- serve on top of cooked pasta and add parmesan cheese on top
- melt butter for 20 seconds in a microwave or in a low heat fire in a pan
- remove from heat. add salt, pepper, garlic and parsley
- spread butter mixture on top of each bread and toast until lightly brown
- add grated cheese on top of bread and butter before toasting (otional...don't add salt if you opted to use cheese)
- heat pan (use a non-tick pan to prevent from sticking)
- add oil and heat
- put salt and pepper on the dory before frying
- pan fry dory for 3-5 mins on each sides. don't overcooked fish
